Sweet And Sour Carrots - cooking recipe

Ingredients
    1 lb. carrots, peeled and cut
    1 medium green pepper, chopped
    1/3 c. sugar
    1 tsp. cornstarch
    1 (8 oz.) can pineapple chunks
    2 tsp. vinegar
    2 tsp. soy sauce
    1/2 tsp. salt
Preparation
    Cook carrots in small amount of water and salt until tender. Add green pepper; cook 3 minutes and drain.
    Combine sugar, cornstarch and salt in medium saucepan.
    Drain pineapple.
    Reserve juice.
    Add water to pineapple juice to make 1/2 cup liquid.
    Stir into sugar mixture.
    Stir in vinegar and soy sauce.
    Cook over low heat until bubbly.
    Stir constantly.
    Mix all ingredients; heat and serve.
    Do not boil.
