Ingredients

1 1/2 c. mashed cooked sweet potatoes
1/2 c. firmly packed brown sugar
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
2 eggs, well beaten
1 c. evaporated milk
1 Tbsp. melted butter
1 c. flaked coconut
1 (9-inch) unbaked pastry shell
Preparation

In a large bowl, mash potatoes and blend in remaining ingredients.
Pour into unbaked shell.
Bake at 400\u00b0 for about 35 minutes or until knife inserted in center comes out clean.
Cool. Serve with whipped cream or Cool Whip on top.
