Sweet Potato Cloverleaf Rolls(A Thanksgiving Tradition!) - cooking recipe

Ingredients
    3 Tbsp. sugar
    2 1/2 tsp. dry yeast
    2 large eggs
    1/3 c. milk
    1/2 stick unsalted butter, melted and cooled, plus more melted butter (to brush on rolls)
    1 tsp. salt
    3/4 c. mashed, cooked sweet potatoes
    3 to 4 c. flour
Preparation
    In small bowl stir together 1 tablespoon sugar and 1/4 cup warm (110\u00b0 to 115\u00b0) water; sprinkle the yeast over the mixture and let it proof for 5 minutes or until foamy.
