Involtini Maiale(Cheese-Stuffed Pork Rolls) - cooking recipe

Ingredients
    1 1/4 lb. pork tenderloin (fillet), thinly sliced
    3 oz. Provolone cheese, sliced
    2 Tbsp. extra virgin olive oil
    salt and freshly ground pepper
    3 oz. anchovies, coarsely chopped
Preparation
    Flatten the meat well with a mallet.
    Place a small piece of cheese and a scrap of anchovy fillet in the center of each slice. Roll up and secure with a toothpick.
