Eggplant Parmesan - cooking recipe

Ingredients
    1 large eggplant
    3 Tbsp. butter
    3 Tbsp. flour
    1 chopped green pepper
    2 c. chopped canned tomatoes
    1 small onion, chopped
    1 tsp. salt
    1 tsp. brown sugar
    1/2 bay leaf (optional)
Preparation
    Peel and dice eggplant and cook 10 minutes in boiling water. Drain and place in greased baking dish.
    Melt butter and then blend in flour.
    Add green pepper, tomatoes, onion, salt, brown sugar and bay leaf.
    Cook 5 minutes or until it gets thick.
    Pour over eggplant and cover with bread crumbs.
    Add butter and Parmesan cheese.
    Bake at 350\u00b0 for 30 minutes.
