Chicken Curry Java - cooking recipe
Ingredients

1 1/2 Tbsp. plus 1 1/2 Tbsp. peanut oil
4 Tbsp. tomato sauce
1 Tbsp. lemon juice
1 small onion or 2 scallions
1 clove garlic, minced
2 tsp. curry powder
pinch of chili powder (optional)
1/4 tsp. black pepper
1/2 c. mandarin oranges and sauce
1/2 c. pineapple chunks and sauce
1 banana, peeled and sliced
1 Tbsp. honey
1 tsp. salt
2 c. cooked chicken, cubed
1 c. cooked rice (for each serving)
Preparation

Measure and prepare all ingredients and set by the stove.
Set wok over medium heat; add oil and all ingredients (except chicken and rice).
Mix well, cover and simmer on low for no more than 15 minutes.
Ladle out 1 cup of the liquid and reserve for an added serving sauce.
Make the rice in the meantime.
Remove the mixture from the wok and set aside.
Add more oil to the wok with a bit more curry, if desired.
Add chicken and cook through lightly over high heat.
