Chicken And Rice A La Costa Rica - cooking recipe

Ingredients
    2 large chicken breasts (more, if desired)
    2 c. rice (pre-cooked)
    1/2 c. chopped celery
    1/2 c. chopped bell pepper
    1 medium onion
    2 carrots, cubed
    1/2 tsp. pepper
    1/4 tsp. oregano
    1 tsp. salt
    1/2 bunch cilantro, chopped
    1 tsp. achiote (a type of food coloring)
    2 Tbsp. cooking oil
    1 small can English peas
Preparation
    Cook chicken in water with salt, pepper, celery, a bit of bell pepper and a garlic bud.
    (These are not the chopped ingredients listed.)
    Save the broth.
    Remove chicken from broth and cool. Remove from bone and break into small pieces; set aside.
