Spiced Carrots - cooking recipe

4 lb. carrots
1 qt. white vinegar
5 jalapeno peppers
1/2 tsp. olive oil
Preparation

Prepare carrots and slice into 1/2-inch thick round slices. Heat vinegar, olive oil and peppers.
Put carrots in strainer and place in boiling vinegar 10 seconds.
Pack carrots in pint jars. Strain vinegar.
Pour over carrots and seal.
