Irish Potato Candy - cooking recipe

3 to 4 potatoes, cooked and salted lightly
3 boxes powdered sugar
peanut butter
walnut or vanilla flavoring (optional)
Preparation

Cook potatoes; mash well. Let cool. Add powdered sugar. Make a dough of the potatoes and sugar. Put into freezer for 30 minutes. Work dough again. Roll out as thin as possible. Spread with peanut butter. Roll up like a log. Cut into slices.
