Backyard Garden Casserole - cooking recipe

Ingredients
    1 1/4 lb. eggplant (1/4-inch sliced)
    1/4 c. olive oil
    1/2 medium onion, chopped
    1 clove garlic, minced
    1 tsp. dried basil leaves
    1/2 tsp. salt
    1/4 tsp. pepper
    8 oz. Mozzarella cheese, grated
    2 large tomatoes (1/4-inch sliced, for garnish)
Preparation
    Place sliced eggplant in one layer on baking sheet.
    Brush with oil and broil for a few minutes.
    Oil a baking dish, 8 x 12-inches.
    Arrange eggplant slices, slightly overlapping.
