Ingredients

1 qt. strawberries
1 1/2 c. sugar
1/2 c. water
1/4 c. cornstarch
3/4 c. cold water
1/8 tsp. salt
1 Tbsp. lemon juice (optional)
1 tsp. red food coloring
Preparation

Bring sugar and 1/2 cup water to a boil.
Dissolve cornstarch in 3/4 cup cold water.
Add this to syrup mixture.
Stir constantly while cooking, until thick.
Blend in salt and lemon juice, if desired, and enough red food coloring until bright red. Wash and remove stems from strawberries.
Place in a 9-inch baked pie shell or 1 dozen medium tart shells.
Pour glaze over strawberries and cool.
Top with whipped cream when cool.
