Spicy Pineapple Zucchini Bread - cooking recipe

3 c. all purpose flour
2 tsp. baking soda
3/4 tsp. nutmeg
3 large eggs
2 tsp. vanilla
1 c. oil
1 c. chopped nuts
1 1/2 Tbsp. vanilla
1/2 tsp. baking powder
2 c. sugar
2 c. coarsely grated zucchini
1 (8 1/4) can crushed pineapple, drained
1 tsp. salt
Preparation

Preheat oven to 350\u00b0. Grease and flour 2, 8x4 loaf pans. In large bowl, combine flour, nuts, baking soda, cinnamon, salt, nutmeg and baking powder. Set aside. In large bowl beat at high speed, eggs till frothy. Beat in oil, sugar and vanilla until mixture is thick and foamy. Add to flour mixture. Stir in zucchini and pineapple. Pour into pans. Bake 1 hour or until cake tester inserted in center comes out clean. Cool in pans 10 minutes, then on racks.
