Pinto Bean And Feta Cheese Quesadillas - cooking recipe

Ingredients
    1 1/2 (15 to 16 oz.) cans pinto beans, drained and rinsed
    3/4 c. chopped red onion
    3/4 c. chopped fresh parsley
    1 1/2 jalapenos (seeded), minced
    1 1/2 tsp. chili powder
    1/2 tsp. ground cumin
    8 whole wheat flour tortillas (8-inches diameter)
    8 Tbsp. crumbled Feta cheese (4 oz.)
Preparation
    Process first six ingredients. Using on/off turns of processor until a very chunky puree forms.
    Transfer to bowl. Season with salt and pepper.
    (Can be prepared day ahead. Cover and chill.)
