Potato Carrot Casserole - cooking recipe

Ingredients
    2 beaten eggs
    1/3 c. milk
    2 slices bacon
    3/4 c. diced carrots
    2 c. peeled, diced potatoes
    1 Tbsp. Parmesan cheese
    3 Tbsp. sour cream
    1/4 c. sliced green onion
    1/2 c. Parmesan cheese
Preparation
    In medium saucepan, cook potatoes and carrots, covered, in boiling water for 12 minutes.
    Drain.
    Cook bacon; drain, crumble and set aside.
    In mixer, mash potatoes and carrots with potato masher.
    Beat in milk until creamy.
    Stir in eggs, 1/2 cup cheese, onion and sour cream.
    Put in casserole dish.
    Bake at 350\u00b0 for 2 minutes; sprinkle with bacon and cheese.
    Bake for 15 minutes.
