Chicken Of The Duke - cooking recipe
Ingredients

2 slices bacon, cooked, crumbled and kept warm
1/4 c. olive oil
1 broiler/fryer, cut up (about 3 lb.)
1/2 c. flour
1/2 tsp. salt
1/4 tsp. pepper
3 medium onions, cut in wedges
1 c. dry white wine
1/2 tsp. sugar
1/2 tsp. crushed thyme leaves
1 c. sliced mushrooms
1 c. halved green olives
Preparation

In large frying pan, fry bacon.
Reserve grease.
Set bacon on woodstove to keep warm.
Add 1/4 cup olive oil to frying pan. Shake the chicken pieces in the flour, salt and pepper.
Fry it in the hot bacon grease and olive oil until very crisp (15 to 20 minutes) over medium heat.
Saute 3 medium onions, cut in wedges, until soft, but not brown.
Add chicken, wine, sugar and thyme leaves.
Simmer 30 minutes.
Add mushrooms and olives; simmer 15 minutes.
Remove to warm serving tray and top with crumbled bacon.
