Banbury Tarts - cooking recipe

Ingredients
    pastry for 1 crust pie
    1/2 c. raisins, finely chopped
    1/2 c. sugar
    1 1/2 Tbsp. fine cracker crumbs
    1 egg yolk
    1/2 Tbsp. soft butter
    1 Tbsp. lemon juice
    1 Tbsp. grated lemon rind
    2 Tbsp. walnuts or pecans, chopped
    dash of salt
Preparation
    Mix raisins, sugar, crumbs, egg yolk, butter, lemon juice, lemon rind, nuts and salt.
    Roll pastry into 12 x 12-inch square. Cut into 9 (4-inch) squares.
    Spread tiny bit of filling over half of each square.
    Moisten edges; fold into triangles and press edges together with fork.
    Prick tops.
    Bake in a 450\u00b0 oven until delicately browned, 12 to 15 minutes.
