Mexican Cornbread - cooking recipe
Ingredients

1 c. corn meal
1 c. buttermilk
2 eggs, beaten
1/3 c. vegetable oil
3/4 tsp. baking soda
1/2 tsp. salt
1 medium grated onion
1 hot green pepper, grated (seeds removed)
1 small can cream-style corn
1/2 lb. grated Cheddar cheese
Preparation

Preheat a heavy, cast-iron skillet or baking dish (well-greased).
Mix all ingredients together in large bowl.
Pour 1/2 the batter in heated dish.
Sprinkle with cheese.
Spoon remaining batter over cheese.
Bake at 375\u00b0 for 35 to 45 minutes.
