Split Pea Soup - cooking recipe

Ingredients
    1 lb. dried split peas, rinsed and drained
    1 ham hock
    1 whole onion
    6 to 8 c. water
    1 carrot, cut in half
    3 to 4 chicken bouillon cubes
    pepper to taste
    Louisiana hot sauce (optional)
Preparation
    In a Dutch oven,
    add
    peas, water, ham hock, onion and carrot.
    Bring to a boil
    and simmer for about 1 hour.
    Remove onion and carrot (leave
    carrot if you wish).
    Remove ham hock and let cool.
    Add
    bouillon
    cubes
    and chopped meat from ham hock. Simmer until peas are real tender and mushy.
    Time will vary. Serve with corn bread and a little hot sauce.
