Crab Cakes Helen - cooking recipe
Ingredients

3 Tbsp. butter
5 Tbsp. flour
1 1/2 c. milk
1 Tbsp. salt
2 tsp. pepper
1 egg, beaten
dash of celery salt
1 tsp. minced onion
2 c. cooked crab meat
mayonnaise
dry bread crumbs
Preparation

Melt butter; blend in flour.
Add milk, stirring constantly, until thickened.
Add salt, pepper, egg, celery salt and onion and continue cooking until very thick.
Remove spine from crab meat and add to mixture.
Chill for several hours.
Form into cakes or cut into steak shape pieces.
Dip each cake or steak into flour, then spread generously on both sides with mayonnaise and roll in bread crumbs.
Brown in hot butter.
