Granny Miller'S Potato Soup - cooking recipe
Ingredients

8 to 10 large potatoes, peeled and cut to small pieces
2 tsp. salt
1 carrot, grated
1/2 green pepper (optional)
1 medium onion
1 stick margarine
1 pt. sour cream
Preparation

Place diced potatoes in a large soup pot. Add water to just below level of potatoes.
Add salt, carrots and onion.
Cook, covered, stirring over medium-low heat until cooked down.
Mash potatoes when soft.
Take off heat and add margarine.
Season with salt and pepper to taste. Add sour cream. Add milk to desired consistency.
Cool in refrigerator for 1 day. Reheat and serve.
