Zucchini Fritters - cooking recipe

Ingredients
    2 to 3 c. grated zucchini, skinned
    1 tsp. salt
    1 to 2 carrots, grated
    2 Tbsp. onions, minced
    2 Tbsp. parsley, minced
    1 egg, beaten
    1/2 c. flour
    dash of pepper
Preparation
    Mix zucchini with salt in colander.
    Let drain for 1/2 hour. Squeeze out excess liquid.
    Mix zucchini with carrots, onion, parsley, egg, flour and pepper.
    Drop by tablespoonfuls in 1/2-inch hot oil.
    Fry until brown on both sides.
    Drain on paper towel.
    Serve hot.
