Marinated Fresh Vegetable Salad - cooking recipe
Ingredients

6 medium tomatoes, cut in wedges
2 c. cucumber slices
2 medium onions, thinly sliced
1 c. carrots, thinly sliced
1 c. celery, thinly sliced
2 bell peppers, thinly sliced
1/2 small head cauliflower
3 medium yellow squash, thinly sliced
1 1/2 c. tarragon vinegar
1 c. water
1/2 c. sugar
2 tsp. basil
1 tsp. salt
1/2 tsp. pepper
Preparation

Place vegetables in large plastic container.
Combine liquid ingredients in a separate container; mix well and pour over vegetables.
Seal and chill overnight.
Makes a tangy, colorful dish low in calories.
