Fluffy Cottage Cheese Blintzes - cooking recipe
Ingredients

1 egg yolk
1/2 c. low-fat cottage cheese
3 egg whites
1/4 c. flour
1/3 c. skim milk
1/4 tsp. salt
Preparation

In a mixing bowl, beat egg yolks until thick and lemon colored.
Add cottage cheese; beat until almost smooth.
Blend in skim milk, flour and salt.
Beat egg whites until peaks fold over. Fold into batter.
Let batter stand 5 minutes.
Pour 1/4 cup of batter onto a preheated griddle which has been brushed lightly with oil.
Bake until the top is bubbly and edges are baked.
Turn and bake the other side.
Serve at once with mock sour cream or fruit.
Yields 6 small Blintzes.
Each serving contains approximately 55 calories.
