1 red bell pepper, chopped
2 carrots, grated
1 small onion, minced
1/4 c. white wine vinegar
2 Tbsp. sugar
2 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. pepper
1/2 c. vegetable oil
1/2 c. olive oil

Shred cabbage in process mixer the thinness you wish or shred by\thand
or large grater.\tMix cabbage, chopped pepper, minced onion and carrots in bowl.\tIn small bowl whisk together vinegar, sugar, mustard, salt and pepper for about 1 minute until sugar dissolves.\tWhisk in vegetable and olive oil until well mixed. Refrigerate
