Coon Or Possum And Pecans - cooking recipe

Ingredients
    1 possum or coon
    salt and pepper
    2 c. pecans
    2 c. applesauce
    2 c. bread crumbs
    1 c. sausage
    about 3 sweet taters
    1/2 c. lemon juice
    butter
    1/2 c. cane syrup (more, if desired; sweeten to taste)
Preparation
    Skin possum. Remove glands and entrails.
    Scrape clean and scald in boiling water. Rub inside and out with salt and pepper. Set in a cool place.
    Stuff with pecans, applesauce and bread crumbs.
    Cover with lemon juice, slices of sweet taters and cane syrup. Add 1 cup of water to pan. Bake at 325\u00b0, basting often, until tender. Add liquid, if needed.
    Serve with rice and mustard greens.
