Ingredients

1 1/2 c. sugar
1 c. shortening
2 eggs
1/4 tsp. lemon extract or 1 tsp. lemon juice
2 3/4 c. soft unbleached white flour or cake flour
1 c. cornmeal
1 tsp. baking powder
1 tsp. nutmeg
1/2 tsp. salt
1/2 to 1 c. raisins
Preparation

In large mixer bowl, beat sugar, shortening, eggs and lemon extract or lemon juice with electric mixer until blended.
In bowl, stir together flour, cornmeal, baking powder, nutmeg and salt.
Add to shortening mixture and beat thoroughly.
Stir in raisins.
Drop from teaspoon 2-inches apart onto greased cookie sheet.
Bake in 375\u00b0 oven for 10 to 12 minutes.
Cool.
Makes 48 cookies.
