Egg Fu Young - cooking recipe

Ingredients
    6 eggs
    1 can mixed chinese veggies, drained
    1/2 c. onion
    2 T. soy sauce
    veggie oil or peanut oil
    4 T. soy sauce
    1/2 c. water
    2 T. corn starch
Preparation
    Mix onions and veggies in frying pan.
    Place small amount of oil, approximately 1/4 c. of veggie mixture.
    Stir, and fry until onions are tender. Mix eggs and 2 T. soy sauce, pour 1/4 c. egg mixture over veggies.
    Cook on both sides.
    Remove and place in oven pan.
    Continue until all mixtures are gone.
