Dianne'S Best Frittata - cooking recipe

Ingredients
    2 Tbsp. butter
    4 medium potatoes (unpeeled), sliced thinly
    1 medium onion, chopped
    salt and pepper to taste
    1 zucchini (unpeeled), thinly sliced
    6 eggs
    2 Tbsp. very hot water
    2 oz. Monterey Jack cheese, shredded
Preparation
    Heat butter in a 10-inch saute pan with ovenproof handle.
    Add potatoes that have been soaked in cold water 15 minutes and dried. Add onion, salt and pepper.
    Cover and simmer about 15 minutes, until potatoes are almost tender.
    Carefully turn the potatoes. Distribute zucchini slices over potatoes and re-cover the pan.
