Honey Blueberry Bread - cooking recipe
Ingredients

3 c. sifted flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 c. sugar
1 Tbsp. instant coffee powder
grated rind of 1 lemon
2 c. frozen dry pack blueberries or 2 c. fresh, rinsed and drained
1/3 c. shortening
2 eggs
1/2 c. honey
1/2 c. water
1/2 c. chopped nuts
Preparation

Combine first 5 ingredients.
Cut in shortening (like coarse cornmeal).
Mix eggs, honey, water, coffee and lemon rind.
Add mixture to dry ingredients all at once.
Stir until just blended. Fold in nuts and berries.
Pour into well-greased 9 x 5 x 3-inch loaf pans (2 pans).
Bake at 350\u00b0 for about 55 to 65 minutes until well browned and firm to touch.
