Chaote Pickles - cooking recipe

Ingredients
    4 lb. Chaote squash, sliced 1/8-inch thick and soaked in salt water 6 to 8 hours
    1 1/2 Tbsp. pickling spice
    3 Tbsp. salt to 1 gal. water
    1 c. clear vinegar
    1 1/2 c. sugar
Preparation
    Heat to dissolve sugar; add drained chaote slices.
    Bring to boil; simmer 7 or 8 minutes.
    Chaote slices will change color. Pack in jars with some of the spices and enough juice to cover slices.
    Set aside for a week or so.
    Try to use young tender chaote squash, more mature squash need to be peeled.
