Skillet Potatoes - cooking recipe

Ingredients
    3 Tbsp. margarine
    1 c. sliced celery
    1/2 c. chopped onion
    2 cloves garlic, minced
    1 can condensed chicken broth
    1/4 c. water
    4 c. cubed potatoes
    1 c. carrot strips
    1/4 tsp. crushed thyme
    chopped fresh parsley
Preparation
    In skillet, cook onion, celery and garlic in melted margarine until tender.
    Add broth, water, potatoes, carrots and thyme. Heat to boiling.
    Reduce heat to low.
    Cover; simmer 15 minutes or until potatoes are tender.
    Uncover.
    Over medium heat, simmer 5 minutes or until broth is slightly thickened, stirring often. Sprinkle with chopped parsley before serving.
    Makes about 5 cups, 6 servings.
    Contains 140 to 150 calories per serving.
