Pickled Beets - cooking recipe

Ingredients
    1 gal. beets, uncooked
    2 c. sugar
    3 1/2 c. white vinegar
    1 1/2 c. water
    2 cinnamon sticks
    1 Tbsp. whole cloves
Preparation
    Wash beets, leaving part of stem on top and also on bottom of beets.
    Cover with water and boil until tender, 20 to 30 minutes at full boil.
    Pour off water and drain.
    Cool with cold water.
    Peel (skins fall off easily).
    Slice beets.
    Mix together sugar, vinegar, water, cinnamon sticks and whole cloves.
    Simmer for 15 minutes.
    Then add beets and boil for 5 minutes on high heat, stirring occasionally.
    Pack beets in sterile jars.
    Pour same syrup over beets to fill jars.
    Seal.
    Wait about one week before serving.
    Yields about 8 pints.
