Maple Walnut Muffins - cooking recipe

Ingredients
    1 1/2 c. walnuts
    3 Tbsp. butter
    2 eggs
    1 c. milk or sour cream
    1 to 1 1/3 c. maple syrup
    1/4 c. shortening or margarine
    1 1/2 c. oatmeal
    1 1/2 c. flour
    1 Tbsp. cinnamon
    2 tsp. baking powder
    1 tsp. baking soda
    1 c. raisins
Preparation
    Preheat oven to 350\u00b0.
    Melt butter.
    Mix with nuts and toast in oven until golden brown.
    Beat together eggs, milk, syrup and shortening.
    In separate bowl, combine dry ingredients.
    Stir into egg mixture.
    Do not overbeat!
    Add raisins and most of the nuts. Pour into well-greased muffin tins.
    Drizzle each muffin with extra syrup; top with nuts.
    Bake for 20 minutes.
