Ingredients

2 c. packed brown sugar
1 1/2 tsp. cornstarch
4 eggs (room temperature)
3 Tbsp. whipping cream
1 tsp. fresh lemon juice
2 tsp. vanilla extract
1/3 c. butter, melted and cooled
1 partially baked 9-inch pie shell
Preparation

Preheat oven to 325\u00b0. Combine the sugar and cornstarch in a large bowl and mix. Beat in the eggs, one at a time. Stir in the cream, lemon juice and vanilla extract.
Blend in the butter slowly.
Pour the filling into pie shell. Bake until puffed and brown, about 50 to 60 minutes. Cool to room temperature and serve.
