Mini Cheesecakes - cooking recipe
Ingredients

12 vanilla wafers
1/2 c. sugar
2 (8 oz.) soft cream cheese
1 tsp. vanilla
2 eggs
Preparation

Line muffin pans with cupcake liners. Place 1 wafer in each liner. Mix cream cheese, vanilla and sugar until well blended. Add eggs and mix well. Pour over wafer, filling each one 3/4 full. Bake 25 minutes at 325\u00b0. Remove from pan when cool, then chill. Top with cherry, blueberry or strawberry pie filling mix or any other desired topping. Makes 12. Very good and easy to make.
