Sweet Potato Custard Pie - cooking recipe

Ingredients
    1 (10-inch) pie shell or 2 (8-inch) pie shells, unbaked
    1 small sweet potato
    1/2 c. margarine
    1 1/2 c. sugar
    1 Tbsp. sifted flour (self-rising)
    1 Tbsp. vanilla
    1 Tbsp. lemon extract
    3 eggs
    1 (5.33 oz.) can evaporated milk
Preparation
    Peel, slice and boil potatoes until tender.
    Drain and mash with margarine.
    Beat in sugar, flour, vanilla and lemon extract. Add eggs, one at a time, beating well after each.
    Add milk; beat well.
    Pour filling in pie shell and bake at 350\u00b0 for 45 minutes or until done.
