Marinated Vegetable Salad - cooking recipe

Ingredients
    2 c. fresh broccoli flowerets
    2 c. fresh carrots, sliced 1/4-inch
    2 c. cauliflowerets
    1 c. diagonally sliced celery, 1/4-inch
    1/2 c. chopped green pepper
    1/2 c. chopped green onion
    1 1/3 c. unsweetened apple juice
    1 c. cider vinegar
    1 tsp. ground black pepper
Preparation
    Steam broccoli, carrots, cauliflower and celery until crisp-tender. Cool. Combine steamed vegetables, green pepper and green onion.
    Combine apple juice, vinegar and pepper.
    Pour over vegetables and mix well. Refrigerate overnight. Will keep up to 3 days.
