Debbie'S Creamy Cauliflower Soup - cooking recipe

Ingredients
    1 Tbsp. butter
    1 small onion, chopped
    1 clove garlic, minced
    2 large potatoes, peeled and diced
    4 c. broth (beef, vegetable or chicken)
    1 1/4 c. chopped celery
    5 c. (1 lb.) cauliflower pieces*
    1/8 tsp. coriander
    1/8 tsp. nutmeg
    1/16 tsp. white pepper
    1/4 tsp. salt
    2 c. light half and half cream
Preparation
    Melt butter and saute onion and garlic.
    Cook potatoes and celery in broth until tender.
    Add cauliflower pieces and cook 7 to 10 minutes more.
    Puree this mixture and return to pan.
    Add coriander, nutmeg, white pepper and salt.
    Simmer 3 minutes.
    Stir in light half and half cream.
    Reheat, but do not boil.
