Guess Again...Carrots! - cooking recipe

Ingredients
    2 lb. carrots
    2 Tbsp. butter
    1 small onion, chopped
    6 to 8 oz. sharp Cheddar, grated
Preparation
    Pare, slice and cook carrots until tender.
    Drain; mash well. Add butter, onion and cheese.
    Put into a buttered 1-quart casserole.
    Bake at 350\u00b0 for 40 minutes, until browned a bit. Garnish with parsley or sprinkle top with buttered crumbs.
    Serves 8.
