Fat-Free Microwave Mashed Potatoes - cooking recipe

4 medium potatoes
2 c. skim milk, divided
salt
pepper
Butter Buds (optional)
Preparation

Peel and cube potatoes.
Put in a 5-quart glass bowl (large electric mixer bowl works).
Pour in 1 cup milk.
Cover and microwave on High for 10 minutes. Remove. Add 1 cup milk and mash a little (to prevent boil over).
Return to microwave for 10 to 15 more minutes.
Remove. Add salt, pepper and Butter Buds to taste. Mash or whip. Since you don't drain potatoes, they retain all their nutrients and flavor.
