Ingredients

2 Tbsp. butter
2 tsp. cornstarch
1/4 tsp. salt
1/3 c. sugar
1/4 c. cider vinegar
1 c. orange juice
2 tsp. grated orange rind (optional)
3 c. cooked, sliced beets
Preparation

Melt butter in saucepan, blend in cornstarch and salt.
Add sugar, vinegar and orange juice; cook over medium heat until thick, stirring constantly.
Add beets and simmer over low heat for about 10 minutes until heated through.
Serves six.
