Candied Citrus Peel - cooking recipe

Ingredients
    2 c. citrus peel, cut into thin strips (can be orange, grapefruit or lemon)
    1 c. sugar
    1/2 c. water
    sugar
Preparation
    Put 2 cups of peel in a saucepan, cover with cold water and bring to a boil.
    Reduce heat and simmer 8 minutes.
    Drain. Repeat cooking twice.
    Wash saucepan.
