Tofu And Vegetable Quiche - cooking recipe

Ingredients
    1 medium onion
    1 green pepper, chopped
    1 c. broccoli, chopped
    1 c. mushrooms, sliced
    1 Tbsp. olive oil
    1 c. soy milk
    pinch of nutmeg
    1/2 bunch fresh basil, chopped
    1/2 pt. soft tofu
    1 pie shell
    pepper to taste
Preparation
    Preheat oven to 325\u00b0.
    Saute the onion, green pepper, broccoli, mushrooms and corn for a few minutes.
    In a blender, blend soft tofu with soy milk, basil and seasoning.
    Place the sauteed vegetables in the pie shell and pour the tofu mixture over the top.
    Bake until a knife inserted into the custard comes out clean (approximately 15 minutes).
    Yield:
    4 to 6 servings.
