Codfish Salad - cooking recipe
Ingredients

1 lb. salted cod fillets
4 medium potatoes, boiled and diced
3 eggs, hard-cooked and chopped
1 onion, chopped
1/2 c. pitted green olives, sliced
2 Tbsp. parsley, chopped
3/4 c. olive oil
1/3 c. lemon or lime juice
dash of pepper
Preparation

Salt cod is not uniform in its saltiness; a small fillet that can be easily bent does not need as much soaking as a large piece that is stiff with salt.
Before cooking, all salt cod must be soaked in several changes of water.
