Fresh Apple Cake - cooking recipe

Ingredients
    2 c. flour
    1 1/2 c. sugar
    1/2 c. vegetable oil
    4 apples peeled and chopped, not too fine
    2 eggs
    1 tsp. cinnamon
    1 tsp. baking soda
    1/2 tsp. salt
    1 c. chopped nuts, optional
    2 tsp. vanilla
Preparation
    Put all ingredients together in a mixing bowl and stir well. Bake in lightly greased and floured 9 x 13 x 2 pan.
    Bake 25 to 35 minutes in a 350 degree oven.
    Cool 35 to 40 minutes before sprinkling powdered sugar over top, if desired.
    We do not use powdered sugar.
    We use Cool Whip in place of powdered sugar.
