Fried Catfish - cooking recipe

Ingredients
    catfish fillets
    2 c. cornmeal
    1/2 c. flour
    salt
    pepper
    cayenne pepper (optional)
    peanut oil
Preparation
    Rinse fillets and soak in salt water for 5 minutes. Drain. In a paper sack, combine cornmeal, flour, salt and pepper. Mix well. Drop in fillets and shake to coat. Drop in fry pan with hot oil. Cook until fish floats, turning once to brown other side.
