C'S Potato Cakes - cooking recipe
Ingredients

4 medium white potatoes, peeled and coarsely shredded
1 small onion, grated
1 egg
1/3 c. all-purpose flour
1 1/2 tsp. salt
dash of pepper
2 Tbsp. oil (Crisco)
Preparation

Mix potatoes, onion, egg, flour, salt and pepper in mixing bowl.
Mix well.
Heat oil in large skillet.
Spoon 1/4 cup potato mixture into skillet for each of 4 pancakes.
Flatten with spatula.
Cook over medium heat 10 to 15 minutes, or until golden brown, turning over once.
Drain on paper towels.
Add additional oil, if needed.
Repeat with remaining potato mixture.
Makes up to 6 servings.
