Salmon Supper Loaf - cooking recipe

Ingredients
    2 (1 lb.) cans salmon
    1 onion
    4 stalks celery
    1/4 c. butter
    1/2 lb. sliced mushrooms
    2 c. fresh breadcrumbs
    1/2 tsp. salt
    1/4 tsp. pepper
    3 Tbsp. chopped parsley
    4 tsp. grated lemon rind
    1/2 c. lemon juice
    2 eggs
    1/2 c. milk
Preparation
    Flake salmon; reserve liquid.
    Peel and chop onion and celery. Heat butter in skillet and saute onion and celery, about 10 minutes.
    Combine with breadcrumbs in a large bowl.
    Add salmon, reserved liquid, salt, pepper, parsley, lemon rind and lemon juice.
    Beat eggs lightly and add to the mixture with the milk. Put mixture in large greased loaf pan and bake at 375\u00b0 for 50 minutes.
    Serves 6 to 8.
