Mornin' Muffins - cooking recipe

Ingredients
    1 egg
    1/2 c. brown sugar
    1 c. rolled oats
    3/4 c. plain nonfat yogurt, mixed with 1/4 c. milk
    1 c. whole wheat flour
    2 Tbsp. cinnamon
    1/2 tsp. salt
    1/2 tsp. baking soda
    1 1/2 tsp. baking powder
    1 1/2 c. vegetable oil
    1/2 c. raisins
    1/2 c. shredded coconut
Preparation
    Preheat oven to 400\u00b0.
    Beat egg in mixing bowl.
    Stir in brown sugar, oats and yogurt-milk mixture.
    Let stand while combining the flour, salt, soda, baking powder and cinnamon in a separate container.
    Add dry ingredients and oil to oat mixture, stirring with a spoon just enough to moisten ingredients.
    Do not overbeat. Stir in raisins and coconut.
    Spoon batter into paper-lined cups, filling generously and bake for 17 minutes or until toothpick stuck into the center of one comes out clean.
    Makes 12 muffins.
