Spinach Khoresh - cooking recipe

Ingredients
    1 large onion, chopped
    3 cloves garlic, minced
    2 lb. stew beef, cut bite size
    1/2 tsp. turmeric
    1 tsp. salt
    1 Tbsp. dried mint
    3 c. boiling water
    2 (10 oz.) pkg. frozen chopped spinach or 2 bunches fresh spinach, washed and chopped
    1 c. chopped green onions
    1 c. chopped leeks
    1/2 c. chopped parsley or 1 1/2 Tbsp. dried parsley
    1/2 c. chopped coriander or 1 Tbsp. dried coriander
    4 Tbsp. lemon juice
Preparation
    Brown onion and garlic in oil in a 4-quart saucepan on medium-high heat.
    Add meat and stir, cooking until meat is no longer red.
    Add turmeric, salt and mint, mixing well.
    Add water; cover and simmer for 15 to 20 minutes.
    Add all the greens and the potatoes, mixing well to thaw.
    Cover and simmer on low heat for 45 to 60 minutes or until the meat is tender.
    Add the lemon juice and, if too thick, add some water.
    Serve over steamed rice.
